From the Kitchen: Ñebey
Ñebey is a beautiful thing. Mostly because it is one of the few Gambian dishes that doesn’t include white rice.
Ñebey is basically black-eyed beans simmered with tomato paste, bullion cubes, onions and anything else the cook wishes to throw in the mix. I’ve had it with cassava, potato, carrots and even chicken or shrimp.
I like to pile it on a homemade loaf of local bread to make a sandwich. Try it at home!
